Why do we not use negative grounding?

We tend not to do it nowadays because negative grounding reduces galvanic corrosion of the frame of vehicles. You can call anything in a circuit "ground". "Ground" is just a reference point. Ground can be anywhere in the circuit, but it is usually near the power supply, because current going into or coming out of ground needs to go somewhere.

Should a negative pole be wired together?

Wiring the negative poles together is correct. Remember that in the car the chasis is used for negative potential. The Ground connection of your Inverter should be grounded correctly.

Do you use a positive ground on a car battery?

Well there are some uses of a positive ground but that's rare outside of telephone gear. Generally the negative post on the battery is grounded to the chassis of a vehicle. The reason for this was touched on in other answers, the need for two fuses is to cover some known failure modes.
